The most important addition to a stable framework are useful and powerful brakes. You have to get far better performance than road or mountain. Racing brakes would be a good solution for touring if Allow the frame geometry and tire sizing.
The best solutions are goodcantilever brakes. The photo shown on the brakes with servo worm gear increase the braking force when hitting the rim continuously. These are no longer available, but by far the best solution for touring bikes. Alternatively, I recommend Shimano XT (new Shimano XT 2012 components) or Campagnolo Euclid.
V-brakes (V-Break reviews) are also suitable, hydraulic brakes are on the road virtually non-repairable, even the spare parts supply in remote areas difficult.
